Strawberries, strawberries ... right, I love strawberries, but really, after a month of reading, looking, pinning and eating strawberries, I've had enough.
I decided to move on to a tropical fruit. Nothing says tropical to me more than a Pineapple. And Coconut and... you get the idea.
This recipe was on the back of a Moirs box of jelly, which I cut-out and stapled into one of my cookbooks. I have been using this easy recipe for years and still love it.
I did, however, make small changes to the recipe, but I doubt Moirs will mind - as long as I keep on buying their product. No, they're not asking me or paying me to say anything about their goodies .. I wish!
This is what it looked like before we dug in.
Two giant pieces are gone - it does slice better if you leave it overnight to really set .. but who wants to wait for something this delicious?
Let's go:
Pineapple Cheesecake {no bake}
1 box Moirs Pineapple Jelly (80 - 90 gr)200 ml Boiling Water
1 x 410g Tin Pineapple Pieces
250g Cream Cheese, softened
250ml (1 cup) Fresh Cream
1 packet Tennis Biscuits (or use your favorite)
1.) Drain the Pineapple pieces and retain 150ml of the syrup.
2.) Dissolve the Jelly powder in the Boiling water - stir until fully dissolved and add the retained syrup from the Pineapple pieces, mix well and place in fridge until set halfway (Do stir every now and then to break up pieces setting on the sides of your bowl).
3.) Whisk the Fresh Cream until stiff points form.
4.) Add the Fresh Cream and Cream Cheese to the half-set jelly and mix well to combine.
5.) Add the Pineapple pieces and mix well again. (Keep a few pieces to decorate)
6.) Use a rectangular (20 x 30cm) dish and pour in a third of the Cheesecake mixture.
7.) Arrange a layer of Tennis biscuits over the Cheesecake and repeat ending with the third layer of Cheesecake mixture.
8.) Decorate with the remaining pieces of Pineapple and crumble a cookie or two over.
9.) Refrigerate until set - around 4 - 5 hours.
Serve!

This looks delicious. i wonder what is a good American choice for the cookies (tennis biscuits) you used. the ones you used look thick enough that i originally guessed it was a cake type recipe. I was thinking Vanilla Wafers, but have any other Americans tried this recipe that you can give us some ideas? I get that the jelly is jello, I can use cool whip for the cream.
