At the moment my kitchen looks terrible. We aren't even halfway with the re-do and it's starting to really {now I want to use a strong word here, but I won't ..} annoy me!
I'm searching for EVERYTHING - even the kettle to boil water. Yesterday, Jacobus asked me where the spreads for sandwiches are "..I think in Cheri's bedroom.." , yes, that's what I answered, because I honestly did not know. As she was away for the weekend, most of the stuff was moved to her room, - we ripped out cupboards that's supposed to move to new spots.
After a while, I remembered .. the whole cabinet with the spreads, was in the dining room and the poor guy could finally make his sandwich. What I am trying to tell you is - the kitchen stuff and everything else is all over the house. Imagine cooking in such a mess!
Then, last night, somehow puppy Rex got hold of a small bottle of Super Glue - fortunately I saw he was chewing something and when I realised what it was, I wrestled it out of his mouth - my hands were covered in glue {and you guys should now how quickly that sticks}, some more spilled on my couch - this dried in seconds, so, I am open for suggestions as how to get it off?? FYI, Rex is just fine and dandy and my hands still has glue on them.
Back to todays recipe - I wanted to make a dessert which didn't need baking or cooking - my Bobotie was already in the oven, and truthfully, I feel lost in my own kitchen. {I think even my mind has stopped working}.
I made the recipe up on the go:
Caramel & Fruit Meringue
1 Large Meringue Nest, about 25cm diameter (I used a store-bought nest)
1 cup Fresh Cream, whipped
3/4 can (of a 397g) Caramel Condensed Milk
1 can (825g) Fruit Cocktail in syrup, drained but keep 1/2 cup of the syrup aside
1 Banana
Lemon juice
Glace Cherries, to decorate (optional)
2 t Cornflour
1/2 t Caramel Concentrate
1.) Fold the Caramel Condensed Milk into the Whipped Fresh Cream - scoop this into the empty Meringue Nest.
2.) Place the Fruit from the can on top of the Caramel mixture.
3.) Slice the Banana and drizzle with Lemon juice to prevent discoloration - Arrange the slices on top of the other fruit - any way you prefer - Add Glace Cherries (if used) on top.
4.) Pour the retained Fruit syrup in a saucepan (keep 2 teaspoons of the syrup in a small bowl) - gently bring to the boil.
5.) Mix the 2 teaspoons of syrup with the Cornflour - add to the boiling syrup, stir over low heat until thick.
6.) Remove the saucepan from the heat and add the Caramel concentrate - let cool completely.
7.) Drizzle the syrup over the fruit - chill until serving.
I only drizzled about half of the syrup over the dessert and served the remaining separately for everyone to add more if they wanted.

This meringue looks delish, I LOVE meringues! Sorry bout the glue, I've got nothing for ya on that one. Have you tried to google ideas?
ReplyDeleteThanks Aimee ! The glue did come off after two days {we have to watch Rex ALL the time - after the glue he chewed up two rolls of painting tape, a {expensive!} roll of strip used in cabinetry .. and that's just to mention a few!} but we enjoy him sooo much - and he knows that ;-)

This looks so yummy! I am wondering if Caramel Condensed Milk is the same as Dulche De Leche? I do not know what would work for the super glue other than scraping with a razor knife. Good luck! Thanks for sharing with Gettin' Krafty!
ReplyDeleteKathie, I think Dulche De Leche is more saucy than caramel condensed milk - to make your own caramel condensed milk , boil a can of ordinary condensed milk in the can in water for around two hours. I used to do this before Nestle introduced the ready-made Caramel kind.
