Coffee or Tea time ?? Make some of these Sugar Donut Muffins.
I've pinned this quite some time ago and thought I'll give them a try. Another good pin!
Since I started blogging, I found that I spend less time on Pinterest .. believe it or not - I find much better recipes (as well as projects) on all the linky parties. I pin all the ones I like, of course, but lately I find myself pinning AND printing at the same time.
The printed ones I keep in a file right next to me, so when it's time to decide what to make for dinner or dessert, I first have a look at the file - that is for the days when my little light in my head doesn't want to (or able to) switch on.
A few days ago, Roy and I, wanted something sweet, but not frosting kind of sweet, and it was already evening, so it had to be quick as well.
Out with my file - and we decided on this recipe, which we thoroughly enjoyed.
Sugar Donut Muffins
source: Daily Dish Recipes3/4 cup Sugar
1 Extra-Large Egg
1 1/2 cups Cake Flour
2 t Baking Powder
1/4 t Salt
1/4 t Nutmeg
1/4 cup Vegetable Oil
3/4 cup Buttermilk
1 t Vanilla
3 TB Butter, for rolling
3/4 cup Sugar, for rolling
1.) Pre-heat oven to 180 deg C (350 deg F). Spray a 12 hole muffin pan with Spray ' Cook.
2.) In a large bowl, beat the Sugar and Egg until light in color.
3.) In a separate bowl, sift the Cake Flour, Baking Powder, Salt and Nutmeg.
4.) Add the dry ingredients to the Egg mixture - stir to combine.
5.) Add the Oil, Buttermilk and Vanilla - stir until just combined - do not overmix.
6.) Spoon into the prepared muffin pan - Bake 15 - 18 minutes until the edges are browned and a tester comes out clean. - Remove from oven.
7.) As soon as the muffins are out of the oven, melt the Butter, roll each muffin in the butter (covering all sides) first and immediately after in the Sugar.
Transfer to a wire-rack and let cool completely.

I've pinned these before too, so glad you tried them for me, now I know to make them! I use Pinterest as my virtual recipe box, I'm bad about printing everything I see out and then not making it. Thanks for sharing and guess what, I pinned this!
