We are huge meat lovers, therefore this pizza is kind of special - no meat, but Roy and I just love it!
We usually order our Feta & Spinach Pizza from Roman's Pizza - a big chain Pizza restaurant in South Africa.
I thought I'll give it a try and make my own... wow, were we surprised! It was much tastier than the Roman's Pizza version.
Give it a try for a Meatless Monday- you will not regret it!
Feta & Spinach Pizza (makes 3 large pizzas) {see below for low-fat option}
3 Frozen Pizza Bases {or use your own recipe and make it from scratch}
1 Can (410g) Tomato and Onion Relish
1 1/2 cups Mozzarella Cheese, grated
3 Rounds of Feta Cheese, cut thinly, (see pic)
3 t Dried Origanum (or Italian herbs)3 handfuls of Spinach, chopped
1.) Pre-heat oven to 220 deg C (420 deg F )
2.) If using frozen Pizza Bases as I did - do not defost.
3.) Spread a third of the Tomato and Onion relish over the pizza.
4.) Sprinkle 1/2 cup grated Mozzarella Cheese over the relish.
5.) Arrange the slices of one Feta round on top of the Mozzarella Cheese.
6.) Sprinkle 1 t Dried Origanum over the pizza - followed by one handful of Spinach.
7.) Repeat with the other Pizza bases (or do them all at the same time!)
8.) Bake 15 - 20 minutes (straight onto the wire rack of your oven) until done.
Remove and serve immediately!
LOW FAT OPTION:
Use these instead : wholewheat pizza bases / fresh tomatoes and onion / low-fat Mozzarella and Feta

This is one of my favorite combinations on a pizza, they work so well together, I must try it with the tomato - onion relish that sounds delicious!
