Loaded Million Dollar Casserole


This recipe made a large enough dish for 8+ people, but it was so good !  We finished it all within half an hour. 

I found this recipe on the Six Sisters Stuff site {I might as well move in there!} and knew I wanted to make it immediately.  You can find the original recipe HERE.

We only had sliced cucumbers as a side - this dish is rich enough to be served by itself, but a little refreshing, crunchy green had gone well with this. 

Loaded Million Dollar Casserole

{8 - 10 servings}

500g Pasta Penne   {or whatever you prefer}
2 TB Oil
1 Onion, chopped
1 Red Bell Pepper, chopped
2 t Garlic, crushed
1/2 pack (of a 250g) Bacon Bits
750g Lean Ground Beef  {Mince}
1 1/2 cups Pasta Sauce   {any tomato based}
Salt & Pepper, to taste
1 250g Cream Cheese, plain/smooth
1 250g Cottage Cheese, plain/smooth
1/4 cup Sour Cream
1 1/2 cups Cheddar, grated


1.) Pre-heat the oven to 180 deg C (350 deg F) - Spray a large oven dish with cooking spray.
2.) Cook the Pasta as per the instructions on the pack.
3.) Heat the Oil in a large pan and saute the Onion, Red Bell pepper and Garlic until soft - remove and keep aside.
4.) Add the Bacon Bits to the pan - cook until done - remove from pan and keep aside with the Onion mixture.
5.) Using the same pan, cook the Beef until done - add back the Onion mixture and Bacon - add the Pasta Sauce and cook through {2 - 3 minutes}- season with Salt & Pepper to taste, if necessary.
6.) Mix together the Cream Cheese, Cottage Cheese and Sour Cream {combine very well!}
7.) Transfer half of the cooked Pasta to the prepared oven dish - top with the Cream Cheese mixture - add the remaining Pasta followed by the Beef mixture.
8.) Bake 30 minutes - remove from oven - sprinkle the Cheddar Cheese over - bake another 15 minutes.

Remove from the oven and serve.

I hope you will enjoy this casserole as much as our family did!
