Coca-Cola Pulled Beef on Crispy Pita

The recipe I am sharing today, actually started out as me reading through a recipe I found in a magazine, but the preparing, most of the ingredients and cooking all changed !

Have you ever read through a whole recipe, ready to get the ingredients and start making it - just to find yourself changing just about everything?

Well, this is what happened here, although everyone loved the actual dish, they did not much care for the Crispy Pitas !  I did ... not sure what their problem was {just a heads up if you are also serving to a finicky family - some might like the Pitas soft and not Crispy}

COCA-COLA PULLED BEEF on CRISPY PITAS

{6 servings}

Olive Oil
1 Onion, chopped finely
3 t Garlic, crushed
750g Stewing Beef, boneless and excess fat removed
Salt & Pepper
1 TB Ground Paprika
1 TB Ground Cumin
1 TB Ground Coriander
4 whole Cloves
2 Bay Leaves
2 cups Beef Stock
2 can (400g each) Chickpeas, drained
2 cups Coca-Cola
1 cup Greek Yoghurt
1 Lemon, juice and grated peel

6 Pita Breads, crisped in a hot oven

Mint or Coriander, to garnish  {optional}

1.) Heat the Olive Oil in a large pot - saute the Onion and Garlic until soft - add the Beef - brown for a few minutes, season lightly with Salt & Pepper.
2.) Mix the Paprika, Cumin, Coriander, Cloves, Bay Leaves and the Beef stock - add to the meat - simmer for 2 hours until the meat is tender, shred the meat with a fork {remove the bay leaves and cloves}.
3.) Add the Chickpeas and the Coca-Cola - simmer another 30 minutes {the sauce is quite thin - use a little cornflour mixed with water to thicken if you prefer}
4.) Mix the Yoghurt and Lemon Juice and grated Peel - stir through the meat.

Serve over the crisped {or not!} Pitas - garnish with Mint or Coriander leaves if using.
